Blackened Chicken Breast with Chili-lime Yogurt

This is a very quick and easy dish to prepare on any weeknight or weekend. The combination of the fresh lime juice, blackening spices, and creamy yogurt dressing for a fresh and tasty dinner that is healthy and satisfying. Serve with your favorite steamed vegetable like asparagus or broccoli.

Blackened Chicken Breast with Chili-lime Yogurt

Total cooking time: , serves 2

Ingredients

  • 2 each 6-8oz chicken breasts
  • 1/4C blackening spice (recipe below)
  • 1/4C chili-lime yogurt (recipe below)
  • 1C pico de gallo
  • 1 jalapeño

Instructions

  1. Preheat oven 350°
  2. On a plate coat both chicken breasts with blackening spice evenly on both sides
  3. Heat cast iron skillet (normal skillet will work) until white hot, you may want to use 1tsp oil in pan just before you sear.
  4. Place chicken in pan and cook 1-2 minutes until blackened then turn to blacken other side (Please note: Blackening spice is not to be confused with blackening or charring of meat which may contain harmful chemicals)
  5. Remove from pan and place in oven safe pan or dish. Place in oven for 5-8 minutes, until center reaches 165°
  6. Remove and top with chili-lime yogurt and pico de gallo, finish with thin slices of fresh jalapeño

Chili-lime Yogurt

Ingredients

  • 3/4C plain nonfat greek yogurt
  • Juice of 1/2 lime
  • 1Tbls agave nectar
  • 1tsp chili powder

Instructions

  1. Combine all in a bowl and mix well

Blackening Spice

Ingredients

  • 1tsp paprika
  • 1/4tsp garlic powder
  • 1/4tsp black pepper
  • 1/4tsp onion powder
  • 1/8tsp salt
  • 1/8tsp cayenne pepper
  • 1/4tsp dry thyme
  • 1/4tsp dry oregano
  • 1/8tsp granulated sugar

Instructions

  1. Combine all ingredients and store in container
